🇵🇹 DEGORGEMENT, O QUE É?

Por trás de uma garrafa de vinho, está sempre uma equipa e muuuito trabalho.

Depois de 9 meses a fermentar em garrafa, chega a hora do processo final do nosso espumante: o chamado degorgement, para limpar a bebida. Neste processo, o gargalo da garrafa é congelado para solidificar os sedimentos que ficam após a segunda fermentação nos espumantes feitos pelo método tradicional. A garrafa, então, é aberta e a pressão expele o ‘gelo’.

Depois volta a ser arrolhada, estando pronta a ser vestida com um rótulo que, modéstia à parte, lhe fica muito bem 🥰🍾

Behind a bottle of wine, there is always a team and a lot of work.

After 9 months fermenting in bottle, it’s time for the final process of our sparkling wine: called disgorgement, to clean the drink. In this process, the neck of the bottle is frozen to solidify the sediments that remain after the second fermentation in sparkling wines made using the traditional method. The bottle is then opened and the pressure expels the ‘ice’.

Then she is corked again, ready to be dressed with a label that, modesty aside, suits her very much 🥰

🇵🇹 A HUMIDADE NA AMÊNDOA

Na prática, considera-se que a colheita deve ser iniciada quando 75% da casca das amêndoas se separam - sendo este um dos indicadores de que o fruto atingiu o seu estado de maturação.
De qualquer maneira, é importante monitorizar os vários fatores relacionados à maturação do fruto, como o estado de abertura e cor da casca, a queda do fruto da árvore, a cor do miolo e a quantidade de humidade no mesmo.
E como analisamos esta humidade?
- Recolhemos amostras representativas de todo o talhão
- Partimos a casca, retirando o miolo da amêndoa
- Através de equipamentos de medição apropriados, medimos a humidade

A humidade do fruto ajuda-nos a decidir o melhor momento para começar a colher o fruto, sendo que é sempre preciso levar em consideração o método de secagem após a colheita, onde esta perde sempre alguma água.
Para garantirmos a qualidade e o armazenamento seguro, procedemos à secagem do miolo até que a mesma se encontre entre os 6% e os 8% de humidade.

É nesse momento, que seguimos com o processo para a podermos embalar e chegar até vocês💮

🇺🇸 HUMIDITY IN ALMOND

In practice, it is considered that the harvest should begin when 75% of the shell of almonds separates - this being one of the indicators that the fruit has reached its ripening stage.
In any case, it is important to monitor the various factors related to fruit maturation, such as the state of opening and color of the skin, the fruit falling from the tree, the color of the kernel and the amount of humidity in it.
And how do we analyze this humidity?
- We collect representative samples from the entire batch
- We break the shell, removing the almond kernel
- Using appropriate measuring equipment, we measure humidity

The humidity of the fruit helps us decide the best time to start harvesting the fruit, and we must always take into account the drying method after harvest, where it always loses some water.
To ensure quality and safe storage, we dry the crumb until it is between 6% and 8% humidity.

It is at this moment that we continue with the process so that we can pack it and get it to you💮

🇵🇹 COLHEITA NOTURNA: a eficiência e qualidade do vinho
A uva é quem manda. Cuidamos, cultivamos e, quando ela nos diz que está num ponto ótimo, colhemos. E colhemos à noite por causa da temperatura que tem muita influência na qualidade da uva. 🍇
Colher em temperaturas baixas, como as que se fazem sentir durante a noite, ajuda a manter o frescor e a integridade das uvas - os bagos mantém-se frios, as películas firmes, os níveis de açúcar estáveis. As vantagens são inúmeras: menos oxidação, mais aroma e melhor sabor.

Outro ponto importante é o aumento da eficiência energética porque não há necessidade de refrigerar as uvas mecanicamente antes da fermentação, sendo também possível evitar que as leveduras indígenas (da própria uva) iniciem uma fermentação antes do desejado.

Para além de tudo isto, esta escolha também torna o trabalho mais produtivo e menos cansativo porque permite que a nossa equipa do campo possa evitar as horas de mais calor, principalmente no nosso querido Alentejo.

Esta técnica ajuda-nos a conseguir vinhos mais equilibrados, que oferecem excelência e qualidade 🍷

The grape knows better. We take care of it, we cultivate it, and when it is at an optimal point, we harvest it. And we harvest at night because of the temperature, which greatly influences the quality of the grapes. 🍇
Harvesting at low temperatures helps maintain the freshness and integrity of the grapes - the berries remain cold, the skins firm, and the sugar levels stable. The advantages are numerous: less oxidation, more aroma and better flavor.

Another important point is the increase in energy efficiency because there is no need to mechanically refrigerate the grapes before fermentation.

In addition to all this, this choice also makes work more productive and less tiring because it allows our field team to avoid the hottest hours, especially in our beloved Alentejo.

This technique helps us achieve more balanced wines, which offer excellence and quality 🍷

🇵🇹 CONTROLO DE QUALIDADE: ACIDEZ TOTAL

A acidez total é uma análise feita através de uma titulação: a titulação é um método para quantificar uma determinada substância numa amostra (no nosso caso -vinho) em que se adiciona um titulante a uma solução até que o indicador mude de cor, indicando o fim da reacção.
Neste caso, determina a quantidade total de ácidos presentes, utilizando como titulador uma solução de hidróxido de sódio (NaOH) e utilizando o azul bromotimol como indicador, na amostra do vinho analisado.

É quando existe alteração de cor que sabemos que toda a acidez foi neutralizada.

A acidez total é crucial para conseguirmos alcançar um vinho de qualidade pois interfere no seu sabor, na sua longevidade e na sua qualidade - esta é mais uma das razões pela qual cá em casa damos sempre muita importância ao controlo de qualidade: queremos garantir o melhor dos nossos vinhos para que sejam também os melhores vinhos para vocês. 🍇

🇺🇸 QUALITY CONTROL: TOTAL ACIDITY

Total acidity is analyzed through a titration - is a common laboratory method of quantitative chemical analysis to determine the concentration of an identified analyte. In this case, we determine the total amount of acids present, using a sodium hydroxide (NaOH) solution as a reagent using blue bromothymol as an indicator, in the analyzed wine sample.

When the color change, we know that all the acidity has been neutralized.

Total acidity is crucial to achieve a quality wine as it affects its flavor, its longevity and its quality - this is another reason why here at home we always attach great importance to quality control: we want to guarantee the best of our wines so that they are also the best wines for you. 🍇
